Peanut Butter Stone Fruit Cobbler

Summer is the season for stone fruit, so naturally we whipped up a recipe with a few of our favorites: cherries, peaches and our Peanut Butter Perfect Bar. This Peanut Butter Stone Fruit Cobbler has a cinnamon-oat peanut butter base, is made to be gluten free and goes perfectly with vanilla ice cream. This recipe is a dream for any get together and is an easy way to make sure you use any fruit you may have laying around this summer. Ingredients

Filling

  • 3 pounds fresh stone fruit, chopped (we used peaches and cherries)
  • ¼ cup one-to-one gluten-free flour
  • 1 cup granulated sugar
  • ¼ teaspoon sea salt

Crumble

  • 4 Peanut Butter Perfect Bar
  • ¼ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 ½ cup gluten-free, old-fashioned oats
  • ¼ cup one-to-one gluten-free flour
  • ½ cup (1 stick) unsalted butter, cold and cut into small pieces

Topping

  • 1-2 pints vanilla ice cream

Instructions

  1. Preheat oven to 375°F and grease a 9×13” pan with butter.
  2. In greased pan, stir together stone fruit, flour, sugar, and sea salt. Set aside and stir occasionally.
  3. In a food processor, pulse Perfect Bar with brown sugar and cinnamon to chop.
  4. Add oats, flour, and cold butter then pulse until mixture is coarsely combined.
  5. Crumble the Perfect Bar topping over the stone fruit in pan.
  6. Bake 35-45 minutes, or until top is golden and fruit is bubbling.
  7. Let cool 20+ minutes.
  8. Serve with vanilla ice cream and enjoy!
