Serves 10 to 12

Bottom Crust + Stars

  • 2 ½ cups all-purpose flour or all-purpose gluten-free flour
  • 1/3 cup almond flour
  • ¼ cup granulated sugar
  • 1 tsp sea salt
  • 1 cup unsalted butter, cold and cubed
  • ¼ cup ice water
  • 2 tsp apple cider vinegar

Streusel Topping

  • 1 cup old-fashioned rolled oats
  • ½ cup all-purpose flour or all-purpose gluten-free flour
  • ¼ cup light brown sugar
  • ½ tsp cinnamon
  • ½ tsp sea salt
  • 1 Salted Caramel Perfect Bar
  • 3 tbsp unsalted butter, cold and cubed

Apple Filling

  • 8 to 10 large honey crisp or gala apples, peeled, cored, and thinly sliced
  • 1/3 cup freshly squeezed lemon juice
  • ¼ cup granulated sugar
  • 2 teaspoons cinnamon
  • 2 tbsp all-purpose flour or all-purpose gluten-free flour

Assembly + Serving

  • 1 egg wash
  • 2 tbsp granulated sugar
  • *Your favorite salted caramel sauce + ice cream, for serving

Make the dough: In the bowl of a food processor, combine the flour, almond flour, sugar, and salt and pulse to combine. Add the cubed cold butter and pulse into the flour mixture until pea sized pieces form. Add the vinegar to the ice water. While pulsing, slowly stream the ice water into the dough just until a cohesive mass forms when pressed together. Next, transfer dough to a work surface and divide into two pieces. Pat into two discs, wrap in plastic wrap, and place in fridge for at least 1 hour to firm up.

Make the streusel topping: Whisk to combine the oats, flour, sugar, cinnamon, and salt in a medium bowl. Crumble in perfect bar and add the butter. Using your hands, squeeze the mixture until it comes together evenly and nicely into coarse crumbs. Set aside.

Make the apple filling: Combine all ingredients for the filling in a large mixing bowl and gently toss until the apples are evenly coated with the spices.

Make the crust: Roll out 1 disk of dough on a lightly floured surface to a 13-inch round. Transfer to a parchment-lined baking sheet and chill in fridge. Repeat with remaining disc, into a 9-inch circle. Chill both for 15 minutes.

Assembly: Remove the 13-inch unbaked and rolled out crust from the fridge and lay into a10-inch pie dish. Crimp the edges of the bottom crust along the rim, as desired, and add the apple slices. Top the apples with the streusel crumbs, retrieve second rolled-out crust from fridge, and set onto a parchment-lined work surface. Using various star cookie cutters, cut out a few stars. Carefully transfer the stars and place onto crumb crust. Lightly brush stars and crimped edges with egg wash and sprinkle over with sugar.

Bake: Preheat oven to 425°F and chill pie until firm, about 20 minutes. Place pie on a parchment lined baking sheet and bake pie for 25 minutes at 425°F. Lower heat to 350°F and continue baking, covered with foil, for another 35 to 40 minutes until the pie is bubbling and the crust is golden brown. Let cool for 20 minutes before slicing and serve warm with your favorite salted caramel sauce and ice cream. Happy eating!

*The pie keeps well covered in the refrigerator for up to 4 days.
