Mini Cranberry Crunch Banana PB Oat Muffins

These cute little muffins are perfect for an on-the-go breakfast! Grab a couple on your way to work; eat a couple before the gym to fuel your workout; or simply top with peanut butter any time and devour. Try the recipe below and let us know how yours turn out!

Recipe:

  • ½ cup whole wheat flour
  • 1 cup oatmeal
  • 2 Cranberry Crumble Perfect Bars, diced small
  • 1 teaspoon baking powder
  • pinch salt
  • 1 ripe banana, mashed
  • 1 egg white
  • 1 teaspoon vanilla extract
  • ½ cup almond milk
  • ¼ cup honey

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine flour, oatmeal, Perfect Bars, baking powder and salt.
  3. In a separate bowl, combine banana, egg white, vanilla extract, almond milk and honey.
  4. Add wet ingredients to dry ingredients.
  5. Grease a mini muffin tin and fill ¾ full with batter.
  6. Bake for about 10 minutes or until toothpick comes clean.
  7. Let cool on a cooling rack and enjoy!
