Almond Ricotta and Perfect Bar Toast with Berries and Honey

Serves 6

Almond Ricotta

  • 1 cup whole raw almonds (or white slivered almonds)
  • ½ cup + 2 tbsp oat milk
  • 2 tsp lemon juice
  • ¼ tsp sea salt
  • 1 tsp honey


  • ½ loaf whole wheat bread, sliced into 6 slices
  • 1 to 2 Peanut Butter Perfect Bar, chopped
  • 2 cups fresh berries
  • Honey, for drizzling

Blanch the almonds: Bring a small pot of water to a boil. Add the almonds and boil for exactly 1 minute. Drain the almonds from the water and pat dry. The almonds skins will be slightly shriveled. Using your fingers, gently squeeze the almonds to loosen their skin. Remove this layer and repeat with remaining almonds. (Skip this step is using previously blanched slivered almonds).




Make the Ricotta: Add the almonds, oat milk, lemon juice, sea salt, and honey to a high speed blender and process on high until very smooth. The mixture will be very thick, the blender will be loud, but hold out on adding more liquid unless you absolutely have to — you want a thick consistency! Ricotta should be a very creamy but still have a slightly grainy texture. Transfer to a small bowl or container.

Make the toasts: Toast the bread and prepare the berries. Spread the ricotta across the sliced toasted bread, top with perfect bar pieces, sliced strawberries, blueberries, etc. Drizzle with honey and enjoy it immediately!
